One of the essential components of Indian cooking is the use of masala, a blend of spices that adds a unique flavor and aroma to dishes. What is Masala?

My Master Masala Recipe

       

I’m thrilled to share my master masala recipe, which forms the base for many of my dishes. This versatile blend can be used in curries, stews, and even as a rub for meats and vegetables.

               

Ingredients:

       
               
  • 2 tablespoons cumin seeds
  •            
  • 2 tablespoons coriander seeds
  •            
  • 1 tablespoon turmeric powder
  •            
  • 1 teaspoon cardamom seeds
  •            
  • 1 teaspoon cloves
  •            
  • 2 sticks of cinnamon
  •            
  • 1 teaspoon black peppercorns
  •        
               

Instructions:

       
               
  1. Toast the Spices: In a dry skillet over medium heat, toast the cumin and coriander seeds until they become fragrant. Be careful not to burn them.

  3. Grind the Spices: Transfer the toasted seeds to a spice grinder or mortar and pestle. Add the cardamom, cloves, cinnamon, and black peppercorns. Grind until you have a fine powder.
